Can you replace the fuel gauge with a aftermarket gauge with wiring differently just hooking up to orange and ground.

No, the orange wire is actually a component in the ground circuit.

The sender is just a variable resistor inline, where the "ground" wire at the tank completes the ground circuit.

You'll have to have power to the gauge to make it operate.
